Cauca is located in the Southwest of Colombia, north from Nariño and East of Huila. Coffee is mainly present around Popayán and Inza: this area is a volcanic plateau between the Cordillera Occiden- tal and the Cordillera Central. Those two mountain ranges protect the plateau from the Pacific humidity and trade winds from the south. Coffee trees grow under a stable climate of warm days, colder nights, a well-defined rainy season and in a fertile soil. Paradise for a coffee tree!
