In Finca Tamana we met Don Elias, a proud man for what he has accomplished, hard working for the high quality of coffee. His farm is separated almost in the middle, between caturra and colombia varieties. Elias asks his pickers to be very strict when it comes to picking the cherries in order to have the ripest cherries every day. From his farm, we chose a washed caturra coffee variety, which is fermented in the water for sixteen hours and dried in the shadow for twenty hours so it stays protected from any unwanted tastes. In this farm, except from the amazing hospitality, we also met and loved a parrot named Sophia who is the farm leader!
